Easy 5-Minute Parmesan Zucchini

This is a side dish that can be made in any season (although it’s technically not in season) because it’s just that good. So let’s get started!

Tips

I use regular green zucchini for this dish but yellow squash or a combination of the two would be perfect, too. Also I slice in coins, but you could also spiral your zucchini and use it as a base for spaghetti sauce.

Let’s talk about the Parmesan. I use the Parmesan in the green can, but I’m sure the grated Parmesan is the icing on the cake for this and most recipes. So, if you have grated Parmesan or are picking the ingredients then I would go the extra mile and go for the grated Parmesan.

The Ingredients

  • 2 medium zucchini sliced into coins

  • 2 tablespoons butter cut into chunks

  • 2 tablespoons grated Parmesan cheese or more to your liking

  • Kosher salt and freshly ground black pepper

The Instructions

To prepare the zucchini in the microwave, add the zucchini rounds to a microwave-safe bowl with 2 tablespoons of water and cook for 4 minutes on high. Drain the water from the zucchini and add the butter, tossing it to melt. Season with salt and freshly ground black pepper and sprinkle with Parmesan. Cover until ready to serve while it’s still hot.

To prepare the zucchini on the stove top, place a steamer basket in a saucepan with 1/2 cup water or just below the bottom of the steamer. Fill the steamer basket with the zucchini and cover with a lid then bring to a boil. Steam covered for 3-4 minutes or until the zucchini is tender. Drain the water from the zucchini, remove the steamer, then add the butter, tossing to melt. Season with the salt and freshly ground black pepper and sprinkle with Parmesan. Cover until ready to serve while it’s still hot.
